Greek Summer Vibes
The quintessential Greek dish, light, refreshing, and so flavorful.
Ingredients:
1 cup of grated cucumber, peeled, seeded, grated and very well-drained by squeezing out moisture in a tea towel
1 1/4 cups of whole milk Greek yogurt
4 cloves of garlic, minced (you can add more or less to taste)
zest of one lemon (and some juice to taste)
1 tablespoon of fresh oregano, chopped, or 1/2 teaspoon dried oregano
2 tablespoons of olive oil
Salt & pepper to taste
Method:
- Prep the cucumber: Peel cucumbers, then cut them in half lengthwise. Use a spoon to scrape out all the seeds. Grate the cucumber using a box grater or a food processor fitted with the grater attachment. Place the grated cucumber in a tea towel and squeeze out as much of its water as possible. You can do this over the sink, or over a bowl if you want to use the cucumber water in a smoothie or drink. You want to get the cucumber as dry as possible. Really twist and squeeze it.
- Place the grated cucumber in a bowl. Add the yogurt, garlic, lemon zest, 1/2 teaspoon of lemon juice, oregano, olive oil and a hefty pinch of salt and pepper. Stir together until well combined.
- Taste for salt, pepper and lemon juice. Also taste for garlic level.. if you like it more garlic-y, feel free to add another clove.
- Store in an airtight container in the fridge or freezer. This spread freezes quite well.
