Ingredients:
Butter at room temperature for buttering a loaf pan
4 tablespoons sesame seeds, divided (optional)
3 large eggs
1/2 cup plain yogurt (whole milk preferred)
1 tablespoon baking powder
1/2 teaspoon salt
1-1/2 teaspoons smoked paprika
1-1/4 cups all-purpose flour
1 large handful of chopped parsley
3/4 cup finely diced dry saucisson or salami (think Spanish chorizo, finocchiona or picante salamis)
3/4 cup pitted olives or sun-dried tomatoes or both
3/4 cup shelled pistachios (or the nut of your choice)
1/2 cup hard or semi-hard cheese, finely chopped or shredded (think manchego, asiago, pepperjack or gruyére)
1 handful sunflower or pumpkin or poppy or sesame seeds
Method:
- Pre-heat oven to 350F
- Butter your loaf pan and sprinkle 2 tablespoons of seeds in the bottom and sides of pan so they stick to the butter.
- Whisk eggs and yogurt in a bowl.
- Add salt, baking powder and flour and mix with a wooden spoon or spatula until smooth.
- Add chunky ingredients and mix to incorporate.
- Spread into pan, sprinkle more sesame seeds on top.
- Bake at 350F about 30 minutes or until tester comes out clean.
