The Perfect Coffee Cookie
Fill your cookie jar with these cookies flavored with olive oil, wine, orange, spices, and sesame.
Ingredients
1 cup of olive oil
3/4 cup of sugar
3/4 cup white wine
1/3 cup fresh orange juice, plus any orange zest
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground clove
pinch of salt
4-5 cups all-purpose flour (enough to make a soft dough)
sesame seeds for decorating
Method
- Pre-heat oven to 350F
- In a large bowl, whisk together olive oil, sugar, wine, orange juice, and orange zest.
- Whisk in baking soda, baking powder, cinnamon, clove, and salt.
- Switch to a spoon, spatula, or use your hands, to mix in enough flour to make a soft dough. You have added enough flour when the dough is no longer sticking to your hands and it can be formed into a ball.
- Pinch off small, ping-pong ball size balls of dough and roll them into a rope shape about the side of your index finger. Roll in sesame and place on parchment-lined baking sheet about 1.5“ apart. If the dough breaks on you, just work it a little by rolling in a ball and try again.
- Bake for 25-30 minutes until bottoms and tops are golden brown. (If you prefer crunchy, leave them in a few minutes longer.)
- Cool on baking sheet until room temperature, then store in airtight container.
