Ingredients:
2 cups any mixed unsalted raw nuts: pecans, walnuts, almonds, hazelnuts, cashews, etc.)
1/4 cup maple syrup
1 3/4 teaspoons ras al hanout spice blend OR 1/4 teaspoon ground cumin, 1/4 teaspoon tumeric, 1/4 teaspoon ground cardamom, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, 1/8 teaspoon allspice, 1/8 teaspoon clove
1/8 teaspoon ground cayenne pepper
1 tablespoon olive oil or soft butter
1/2 teaspoon salt
2 sprigs of rosemary, leaves removed from stems and finely chopped
Method:
- Pre-heat oven to 325F.
- Place raw nuts on a parchment lined sheet pan in a single layer. Toast in oven for 10 minutes.
- While nuts are toasting, combine maple syrup, spices, olive oil or butter, salt and chopped rosemary leaves.
- Remove nuts from oven, add them to the bowl with the maple syrup mixture and mix with a rubber spatula until all the nuts are well coated.
- Spread out the coated nuts back onto the parchment lined sheet pan and put them back into the hot oven.
- Roast for 20 minutes, giving them a quick stir/shake mid-way through at the 10 minute mark.
- After 20 minutes of roasting, take them out of the oven and enjoy. Once cool, store in airtight container.
