Moroccan Spiced Candied Nuts

Ingredients:

2 cups any mixed unsalted raw nuts: pecans, walnuts, almonds, hazelnuts, cashews, etc.)

1/4 cup maple syrup

1 3/4 teaspoons ras al hanout spice blend OR 1/4 teaspoon ground cumin, 1/4 teaspoon tumeric, 1/4 teaspoon ground cardamom, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon nutmeg, 1/8 teaspoon allspice, 1/8 teaspoon clove

1/8 teaspoon ground cayenne pepper

1 tablespoon olive oil or soft butter

1/2 teaspoon salt

2 sprigs of rosemary, leaves removed from stems and finely chopped

Method:

  1. Pre-heat oven to 325F.
  2. Place raw nuts on a parchment lined sheet pan in a single layer. Toast in oven for 10 minutes.
  3. While nuts are toasting, combine maple syrup, spices, olive oil or butter, salt and chopped rosemary leaves.
  4. Remove nuts from oven, add them to the bowl with the maple syrup mixture and mix with a rubber spatula until all the nuts are well coated.
  5. Spread out the coated nuts back onto the parchment lined sheet pan and put them back into the hot oven.
  6. Roast for 20 minutes, giving them a quick stir/shake mid-way through at the 10 minute mark.
  7. After 20 minutes of roasting, take them out of the oven and enjoy. Once cool, store in airtight container.
