Ice Cream Season

Amazing ice cream to à la mode all your summer fruit desserts. This ice cream is rich and creamy, with a delictable tang. You do need an ice cream maker to do this one justice.

Ingredients:

2/3 cup sugar

6 egg yolks

2 cups crème fraîche (make your own)

1 1/2 cup buttermilk

zest and juice of 1-2 lemons (approx 1 1/2 tablespoons of zest and the same amount of juice)

pinch of salt

Method

  1. Set up your work area: You’ll need 3 bowls, a fine mesh strainer and a large saucepan for this recipe. In the saucepan, place the crème fraîche, buttermilk, lemon zest, lemon juice, and salt. In the largest bowl, make an ice bath with ice and cold water. Set the second bowl over the ice bath bowl, and the strainer over that bowl. In the third bowl, whisk together the egg yolks and sugar for about 1 minute, until well combined.
  2. Place the saucepan with the crème fraîche mixture over medium/low heat, stir, and cook until it’s hot and steamy. Do not let it come to a simmer or boil.
  3. Once the crème fraîche mixture is hot, slowly pour it into the egg yolk mixture a little at a time, whisking the whole time.
  4. Once everything is combined, pour the mixture back into the saucepan and heat over medium/low, stirring the whole time, until the mixture thickens a bit and almost comes to a simmer. You will see wafts of steam come off, feel the mixture thicken as you stir, and the top will stir a bit. If you have an instant read thermometer, it should come to 170F.
  5. Just before the simmer, when it comes to 170F, remove the mixture from the heat and pour it through the strainer into the bowl set over the ice bath.
  6. Remove the strainer and let is cool. When your ice melts and the mixture is cool, cover the bowl and place it in the fridge for another 1-2 hours, to get it fridge-cold.
  7. Once your custard mixutre is cold, take it out of the fridge, put it in your ice cream maker and process it according to your manufacturer’s instructions.
  8. Once processed, your ice cream will be soft-serve consistency. Put in into a covered container and freeze for a few hours to harden.
